Vitinha put the French champions ahead from Lee Kang-in’s 49th-minute cross.
Mbappe fired a brilliant second into the top corner from 20 yards before Matthieu Udol gave Metz hope.
PSG’s all-time top goalscorer got his second when he ran on to a loose backpass before rounding the goalkeeper with seven minutes remaining.
He is the first PSG player to score a league goal on his birthday for six years – when he netted in a 3-1 win over Caen as he turned 19th.
They could be his first and last birthdays at the club though, with the France captain out of contract at the end of the season – but even if he leaves, PSG will still have a Mbappe.
In added time, PSG boss Luis Enrique handed a debut to 16-year-old midfielder Ethan Mbappe, who joined the club in the same summer as his brother.
Enrique’s side are five points clear of second-placed Nice going into Ligue 1’s winter break.
